Grandma Betty’s zucchini brownies
2 c. flour
1 1/2 c. sugar
1 tsp. salt
1 1/2 tsp. baking soda
1/3 c. cocoa
1/2 c. oats
2 tsp. vanilla
1/2 c. vegetable oil
2 c. blended zucchini
Combine dry ingredients. Add wet ingredients. Mix it up. Bake in a greased 9x13" pan at 350* for 30+ minutes. Make sure it's done in the middle. Let cool.
For the icing [fudge ;) ] on top:
1 c. sugar
5 Tbsp butter or margarine
1/3 c. milk
Combine these in a pan, bring to a boil, and stir constantly for 1 minute. Remove from heat and stir in:
1 16-oz. package milk chocolate chips.
Pour icing over brownies while the icing is still warm.

I loved these brownies as I have a lot of zucchini and am tired of making zucchini bread. I used applesause instead of oil and didn't notice a difference. This icing is more like fudge than frosting, it tastes really good on the first day you bake it. I think I prefer less and will half the icing next time I make it. They do not taste like traditional "brownies." It's more like a mixture of brownie/cake texture. My children however liked it and my husband siad I could make it again.
